More than 1,100 years old, the monastery was painstakingly restored over a 15-year period under the direction of owners Juan Manuel and Lucía Urban González Serna. More than 100 master craftsmen worked every day to rebuild the structure stone by stone, transforming a near-forgotten ruin into one of Spain’s most exclusive private residences.

The Trip
Your adventure begins with arrival in Madrid, where a Trek Safaris partner representative will greet you upon clearing customs and immigration.
From there, enjoy a private transfer through the beautiful Spanish countryside to the Monasterio de San Pelayo, approximately two hours away. Upon arrival, you will be welcomed by Lo Lo and his exceptional staff before settling into your accommodations for a three-night stay.
The monastery features twelve meticulously restored suites and double rooms, each individually designed to reflect the history and character of the estate while offering every modern luxury. With exclusive use of the property, guests enjoy complete privacy in an atmosphere unlike anywhere else in Europe.
Spend the afternoon exploring the magnificent grounds, relaxing in one of the monastery’s elegant gathering spaces or simply taking in the incredible attention to detail found throughout the estate.
Before dinner, guests will gather for cocktails while shooters selecting rental firearms will visit the gun room to choose their matched pair of fine Spanish shotguns for the days ahead.
Dinner is a celebration of the region’s culinary traditions. The monastery’s private kitchen embraces a true “zero-kilometer” philosophy, sourcing seasonal ingredients from local farms and producers to create an authentic dining experience that changes throughout the year.
Following dinner, guests are invited to enjoy coffee, wine or after-dinner cocktails in one of the monastery’s inviting lounges before retiring for the evening.
The Experience
Each morning begins with a leisurely breakfast served around 8:30 a.m., allowing both shooters and non-shooters to start the day at a relaxed pace.
After breakfast, the group gathers in the courtyard for a welcome briefing and safety presentation before departing for the day’s driven partridge shoot.
The estate offers eight distinctive drives, all located within five minutes of the monastery. Each shooting day features four expertly organized drives, presenting an abundance of spectacular red-legged partridge over the line of guns. Between drives, guests enjoy elegant field hospitality with appetizers, refreshments and plenty of time to appreciate both the shooting and the camaraderie.
Following the final drive, everyone returns to the monastery to refresh before an exceptional lunch served either within one of the estate’s beautiful dining rooms or outdoors on the lawn of the shooting house.
While the shooters are in the field, non-shooting guests may choose to spend a peaceful morning enjoying the monastery’s luxurious amenities before departing for a private exploration of the surrounding wine country.
The region is home to some of Europe’s most historic vineyards, offering exclusive tours and tastings led by local experts. Guests may enjoy lunch at one of the wineries or return to the monastery to join the shooting party for the afternoon meal.
As lunch begins, the shooting team presents a traditional tableau honoring the day’s harvest while recognizing the keepers, beaters and staff whose dedication makes each shoot possible.
The day concludes with cocktails followed by another extraordinary dinner showcasing regional cuisine and fine Spanish wines. Evenings naturally unfold into lively conversation, shared stories and relaxed gatherings throughout the monastery, creating memories that will last long after the final toast.
